Abstract
Antioxidants are compounds that have an important role in maintain health because it can prevent free radical, thus inhibit oxidation reactions in the body causes various degenerative diseases. This study aims to analyze utilization of chitosan nanoparticles derived from waste shell shrimp (Litopenaus vannamei) as an antioxidant. Antioxidant activity qualitatively tested with Thin Layer Chomatograpgy (TLC) autograph. Result obtained from Chitosan nanoparticles produce clear stain with violet background. Then quantitative testing used DPPH (2,2-diphenyl-1-picrylhydrazyl) method with spektrofotometer UV-Visible by calculating the free radical inhibition percentage by chitosan nanoparticles at a wavelength of 516,5 nm by using vitamin C as comparison with IC50 value of 2,4703 ppm. Chitosan nanoparticles hasn’t an antioxidant activity with IC50 value of 2731,9 ppm.
